Due to the bug involving Amazon purchasing, I run the risk of missing the current Stamina deal (500 pots for $19.99). Will there be a way for me to get this deal once the issue is fixed if the timer expires on the deal?

You have to use a different non-Amazon device

My suggestion would be to grab a screenshot of the deal you want and if it is no longer available when the issue is resolved raise a ticket with support about it.
No guarantee that it will do anything of course but you may find that they reinstate the deal so you are able to buy it.
